Tabouleh Sandwich
1 c. warm water
2 c. raw cracked wheat cereal or bulgur.
1 c. chopped parsley
½ c. chopped onions
2 tomatoes, chopped
2 T. fresh mint or 1 tsp. dried mint
¾–1 c. lemon juice (for less kick, use less juice)
½–1 c. unrefined oil
Garlic powder to taste
Salt and pepper to taste
Soak cracked wheat in warm water for 1 hour, then drain. Add remaining ingredients and toss together lightly. Refrigerate for several hours to allow the wheat to absorb the moisture. When ready to serve, spread mixture between two thick slices of wheat bread, top with a slice of Swiss or mozzarella cheese, and place under broiler until cheese is melted.
