A: I like coconut oil and have used it regularly for years now because of its many health benefits. Coconut oil is believed to improve both LDL and HDL cholesterol, and has antibacterial and antiviral properties.
- I try to include about a tablespoon in my daily diet. Most often, I just eat a spoonful all by itself.
- You can also take one tablespoon of coconut oil and mix it with one tablespoon of crunchy organic peanut butter. Mix it smooth. It is almost a confection.
- You can also mix it into scrambled eggs or use it to sautee vegetables.
- You can also mix it with spices for a rub to put on meat.
