Dips can be nutritious and taste good without anyone realizing that they aren't loaded with fat calories. Try this mock "sour cream" for starters and add to it your own imaginative variations.

"Sour Cream" Dip
(Makes : 1 Cup)
1 cup low-fat cottage cheese
2 tablespoons nonfat milk
1 tablespoon lemon juice

Combine ingredients in a blender and blend on high speed until smooth. Chill.

Use as a topping for baked potatoes or in dips.

Variations:

Herb Dip: Add 1 teaspoon minced onion and 1/2 teaspoon caraway seeds to "sour cream." Chill.
Poppy Seed Dip: Add 1 teaspoon each honey and poppy seeds, and 1/2 teaspoon cinnamon to "sour cream." Chill. This is good with fruit such as apples and pears.
Dilly Dip: Add 3 tablespoons minced dill pickle and 1 tablespoon minced green onion to "sour cream." Chill.

2 large avocados - mashed - to remove the flesh cut the avocado in half lengthwise around the large pit inside. Twist the two halves in opposite directions. One side will still have the pit in it. Slap the knife blade into the pit and twist slightly. Use a tablespoon to carefully scrape the flesh out of the skin.

1 tomato peeled, seeded, and finely chopped

2 tablespoons chopped green chili peppers (or more). Fresh is best, but canned will do. If using fresh wear rubber gloves or be careful not to touch your face after handling the pepper.

1 tablespoon fresh lime juice

1 clove garlic - finely mashed (two if you like)

½ cup finely chopped onion

1 teaspoon Celtic Sea salt (or to taste)

Combine all ingredients.
