I have been trying to watch my cholesterol levels and I want to know if eggs are okay to eat. I can't seem to get a straight answer from anyone.

The cholesterol and egg controversy has been going on for about 30 years, and eggs have gotten lots of bad publicity for no reason. Eggs are close to the perfect food. It's true that they are one of many foods high in cholesterol, but the cholesterol in eggs is balanced by the lecithin they contain.

Our bodies need cholesterol and if we don't get enough in our diet, the body manufactures its own. Eggs are like everything else—use them in moderation. Nothing is good if you consume too much. One or two eggs daily can be eaten safely and sometimes more if used in cooking.
