Flax Muffins

1¼ c. all-purpose flour
¼ c. gluten flour
1½ tsp. baking soda
2 c. ground flaxseed
1 tsp. nutmeg or cardamom
½ c. packed brown sugar
1/3 c. molasses
1½ c. buttermilk
1 mashed ripe banana
2 handfuls nuts or raisins

Combine all ingredients in a bowl. Bake in an unlined muffin tin sprayed with cooking spray at 350 degrees for about 30 minutes. Makes 8 big muffins. They don't rise much, so it's okay if the cups are filled fairly full.
