Banana Nut Bread

5 very ripe bananas
1/3 c. butter
1 egg
1 c. pure maple syrup (no sugar added)
2 c. whole wheat flour
3 tsp. baking powder
½ tsp. baking soda
½ tsp. sea salt
1 c. chopped walnuts or pecans

Mash bananas and set aside. In a separate bowl, cream the butter, egg, and maple syrup. Slowly mix in flour, backing powder, baking soda, and salt, trying to avoid any lumps. Add mashed bananas and nuts. Mix well. Pour batter into well-greased loaf pan. (Use cooking spray for easy coating.) Top with several whole pecans or walnuts.

Bake at 350 degrees for 25 minutes and then at 300 degrees for another 30 minutes. Test for doneness with a toothpick.
