A Healthy Summer Dessert: Strawberry Frozen Yogurt

Whether you’re looking for a dessert idea for a Memorial Day barbecue tonight, or for any hot summer night, I wanted to share an easy healthy dessert you can make any time you'd like.

I thought this recipe was especially timely since we’re coming up on the time of year that strawberries will be readily available at farmer's markets—or, perhaps growing in your garden. Strawberries are filled with health-boosting antioxidants. Plus, they’re low in calories and just plain delicious.

Strawberry Frozen Yogurt

(Serves 4)

  • ½cup cold water
  • ¼ cup honey
  • 6 Tbsp. nonfat, dry milk
  • ¼ cup lukewarm water
  • 2 cups plain, nonfat yogurt
  • 1 cup fresh or frozen, sliced strawberries (approximately ½ lb)

In a small saucepan, mix honey in cold water until it is dissolved. Mix nonfat, dry milk with the lukewarm water. In an electric blender, process reconstituted milk with yogurt and fruit. While it's blending, add honey mixture, pouring it in a steady stream into center of the vortex, to incorporate it evenly. Freeze until desired consistency is obtained. Other fruits can be mixed or substituted for strawberries. Raisins, nuts, and coconut may also be added to the yogurt. Makes approximately 1 quart.
